Trio owner Tony Marchese teamed up with chef Max Becker to craft a fresh American menu that winks at Marchese’s Italian-Chicagoan background. Brunch-goers love the sweet cinnamon swirl French toast and sandwiches inspired by the Windy City (think: thin-sliced Italian beef and flavorful house pastrami).

At dinnertime, start your meal with a plate of heirloom tomato and burrata bruschetta, then dig into a whole Mediterranean branzino, the rich cola–glazed short ribs, or Tony’s classic baked rigatoni. And don’t forget creative cocktails like the strawberry-forward Forever Marilyn, stirred up by Trio’s award-winning mixologists.

The eatery feeds the valley in more ways than one. Trio is a major supporter of such area charities as AAP Food Samaritans, Desert AIDS Project, Digicom Learning, and Palm Springs High School’s student arts program.
